The 1st session of Internal Staff training took place on the 19th January 2022 with participation of all ARISTOILCAP Partners.The session was dedicated to the findings of ARISTOIL project (funded by Interreg Med). Professor Prokopis Magiatis did a thorough presentation on the agronomic factors affecting the presence of polyphenols in EVOO as well as the relevant research on the health benefits of Polyphenols. An interesting part has been the demonstration of the innovative ARISTOMETRO device able to provide an immediate result of phenolic level of EVOO to producers. The device can support decision making for producers to decide the precise time of harvesting depending of the phenolic content they want to achieve for commercial reasons.
